Apple Pie Apples...

I was on a cooking kick yesterday and also made some Apple Pie Apples! They were so yummy!! Here is the recipe!

- 5 Granny Smith Apples

- 1 teaspoon Ground Cinnamon

- 1/3 c Sugar

- 2 tablespoon Brown Sugar

- Pie Crust {premade or homemade will work. I chose premade.}

 - Cut off the top of 5 apples off and discard. Remove the inside of each apple with a spoon or melon baller very carefully, as to not puncture the peel.

- Mix sliced apples with sugars and cinnamon in a bowl. If you prefer more or less cinnamon make adjustments as desired. Same goes for the sugar.

 - Have your adorable helper scoop sliced apples into hollow apples.

 - Cover the tops in whatever pattern/shapes you want!

- Place apples in an 8×8 pan. Add just enough water to the cover the bottom of the pan.

- Cover with foil and bake for 20-25 minutes. {I used my Demarle round mold and my octagon silpat top instead of the foil and pan.}

- Remove foil and bake for an additional 20 minutes or until crust is golden brown and sliced apples are soft.

- Mine didn't turn out so great... lol I think I hollowed them out too thin.. oh well, they were still pretty tasty!!

 They tasted fabulous with some vanilla ice cream! If you make them, let me know how yours turn out!!

Lumpia...

When I was younger, my mom used to make Lumpia all the time! It was delish and I haven't had it in such a long time. So I decided to make it yesterday. Here is the recipe!

 

3 pkg. Lumpia skins, separated {egg roll wraps work too.}

2 lbs. ground beef

1 lg. onion, chopped

2 cloves garlic, chopped

1 pkg. cole slaw mix

1 can water chestnuts, chopped

1/4 c. water

1 tbsp. cooking oil

1/2 c. soy sauce

2 eggs, beaten

1 tsp. pepper

3 c. white rice {i use minute rice}

- In a skillet, brown beef, drain, set aside.

- Heat cooking oil. Add garlic, brown lightly. Add chopped onion, stir 2 minutes.
- Add water and water chestnuts. Mix all together for 10 minutes.

- Add beef, soy sauce, pepper, and cole slaw mix. Mix and cook for 7 minutes. 
- Add white rice and eggs, mix.

- Put 1-2 tblsp of mixture in lumpia skins.

- Seal edges of skin by brushing water on edge of skin.

- Deep fry 3-4 at a time and serve hot with sweet and sour sauce.

- Makes 60.

These were absolutely delish!! I decided to pan fry some of them since it was taking forever to deep fry them..

Tee Ball Time!!

Talk about a lame blogger...

Things have been crazy busy this past week and I am so glad the weekend is here!

Yesterday was DJ's Tee Ball Picture Day. He was too funny when it came to his pictures. He would make the goofiest faces for his pictures, but I cant get mad, that is how DJ is :) Great memories! When we got to the park, he couldn't wait to get his shirt, socks and hat. When it came time to change his shirt, he got so embarrassed.. haha I had to fight him to swap shirts.

He played with some of his "tee ball player friends" and were so excited to play!

Opening Day is next Saturday!!!

I am debating between gymnastics and ballet for Miss. Reagan. My dad is pushing for mma/kick boxing lol.. He said that she has 2 brothers and needs to defend herself.. So he does have a point. She is just so petite and girly, I just cant see it...

My Scentsy business is booming! Today has been one month with Scentsy and I am almost to my personal goal and I have 2 recruits! I love love love the spring & summer catalog! I can't wait to see what this month brings me!! Plus my recruits are doing amazing too!! If you are in need of some new scentsy or just want to shop around, don't hesitate to stop by here! Hello, Monday!

So happy that this day has finally arrived!!

The kids are back to school and DJ starts his Tee Ball Practice!!

I can't wait to see all of the kids out on the field practicing.. lol So cute! The other night DJ and I went to Sports Authority to get him some cool new cleats.. The guy that was helping us was the manager and told me that he runs a special every year for Little League Players! We got 20% off his cleats!

Yesterday the kids were sick and were throwing up all throughout saturday night. Allen loves wearing Reagan's Tinkerbell Robe.. He did not want to take it off and wore it for about 3 hours.. lol

 This was Dave's outfit when he was a baby!! hahaha!!

Reagan stayed on the couch most of the day with Scratch :)

Beautiful....

oh.my.goodness. the weather here in sunny california has been absolutely gorgeous lately! I can't believe it was 72 degrees yesterday, in February.
The kids played in the house until it was warm enough to go outside. They were having so much fun playing on the McQueen 4-wheeler... I love these kids with all of my heart!

The kids had so much fun playing outside and running out all of their pent up energy. The kids have been home this whole week for Presidents Week. I was going stir crazy and had to get out of the house. All three of them ran and ran and ran till they passed out!

So the Hotel for Vegas is booked for July!! I am so excited!! Some of My Team and I are going to the 2012 Scentsy Convention! You have absolutely no idea how excited I am! Plus, I have never been to Vegas. Well, I have had layovers and flight changes there, but I haven't been on the strip.. Dave on the other hand, is freaking out a little.. He will be home with all three kids for 5 days... hahaha I can't help but laugh.. I told him that he now gets to see what I go through every day. Of course family will help him and things like that.
